Refreshing taste, tender green soup color, and the effect of clearing heat and removing fire… Green tea has many endearing characteristics, and the arrival of hot summer makes green tea the first choice for tea lovers to cool down and quench their thirst. However, how to drink properly to drink healthy?
Myth 1: The fresher the green tea, the better it tastes?
Many people think that the fresher the green tea, the better it tastes, but this perception is not scientific. Although the new tea tastes really good, according to the theory of traditional Chinese medicine, the freshly processed tea leaves contain fire, and this fire needs to be stored for a period of time before disappearing. Therefore, drinking too much new tea can easily make people angry. Moreover, drinking new tea for a long time is not good for health, because the substances beneficial to the human body such as polyphenols and alcohols in new tea have not been completely oxidized, which is easy to stimulate the stomach and cause gastrointestinal discomfort. Therefore, before the green tea spring tea is opened, it is recommended to store it under suitable storage conditions for about a week, and anneal and purify it.
Myth 2: The earlier the green tea is picked, the better?
To be sure, spring tea is not the sooner the better, especially green tea. The early days of green tea are only a relative concept. Green tea is the most widely distributed tea in China, and it is cultivated in the south, and northwest. Due to different latitudes, different altitudes, different varieties of tea trees, different tea management levels of tea gardens, etc., there are also very important weather conditions in the current season. The same is green tea, the germination time of tea trees is not the same, and it is not static. Green teas in the Sichuan Basin and Jiangsu and Zhejiang regions with lower latitudes will germinate at the end of February, and some will be harvested at the beginning of March; while in southern Shaanxi and Shandong Rizhao with higher latitudes, it will not be until the end of March and the beginning of April. What’s more, some unscrupulous merchants are now blindly rushing early in order to cater to consumers. Even though the tea has not yet reached the real picking conditions, they have been mined, and even some hormone drugs have been used to achieve the purpose of germination. Of course, for the same tea garden, the tea leaves picked after wintering will indeed be of much higher quality than those picked later due to the differences in natural endoplasmic properties.
